Loving this new recipe for Roast Butternut Squash, this one with a great sprinkling of curry and brown sugar for caramelisation. This recipe imparts deep flavour and a gorgeous texture for a Butternut, or in fact any kind of squash or pumpkin. Use the cooked squash in curries, with pasta or risotto or even cold in a salad as it is sooooo good.
