Rock Cakes Recipe

This Rock Cakes recipe is one of the easiest bakes to make so is perfect for cooking with children. The recipe though is good for any age to make including grown-ups, the perfect snack with a cup of tea or in a lunch box.

Makes 12 cakes depending on the size

Ingredients:

110g soft butter

150g mixed dried fruit

1 medium egg

2 tablespoons runny honey

2 tablespoons milk

Oil for greasing

Method:

Heat the oven to 200C/Gas 6 and grease a large baking sheet.

Put the flour and baking powder into a large baking bowl and stir.

Cut the butter into small pieces and add to the bowl. Using clean fingers, rub the flour and butter together until the mixture looks like sand. Add the dried fruit and mix again.

Mix the egg and honey in a small bowl or cup then add to the mixture.

Add the milk and mix everything to make a thick dough, don’t worry if it is lumpy.

Divide the mixture into 12 mounds and put them onto the baking sheet and bake for 15 mins or until golden brown and well risen.

Take the tray from the oven and pop the buns onto a cooling tray. The rock buns are ready to eat once they are cool but not cold.

If you want to eat them another day, they will keep well for a day in a plastic box or tin with a lid.
